Getting In Those Fantastic Veggies!

As your health coach, when I am first interviewing a client, I always ask about what their daily food intake looks like. This question is always followed up with, "I eat pretty healthy." After reviewing their food diaries, I find there is usually not too much mention of any fruits or veggies on their lists. Unfortunately, that's not "pretty healthy". I can help with that. My solution is to eat 2 fruit servings and 6 cups of veggies per day. How is this a solution? Well, I will explain.

The two servings of fruits are fairly easy since nature already packs them in handy to-go options. Otherwise, you can add 1/4 to 1/2 cup of mixed berries for instance, to your morning breakfast or mid-morning snack. I recommend eating fruits earlier in the day so that our bodies burn up that sugar. It's good sugar granted, it's still sugar.

The 6 cups of veggies can be done in a variety of ways but here's how I explain it. Say you make an omelette in the morning, or a sandwich or wrap for lunch, add in as many veggies as you like. So for instance, 1/2 cup green peppers and 1/2 cup red peppers with some chopped onions and garlic in the eggs. Or lots of greens, onions, tomatoes, peppers on the sandwich or wrap. (You can also use avocado, guacamole or hummus as the spread too.) One handful of salad greens equals about 1 cup so I do two handfuls of my greens, add tomatoes, onions and avocado. I eat my salad in the afternoon sometime, with lunch, afternoon snack or dinner. So you've already had about 4 cups of veggies for the day. Then with dinner, I have two cups of veggies with my meal. Literally half my plate are veggies. So there's your 6 cups. If I feel I don't get enough veggies in for the day, I will snack on raw veggies with ranch dressing or hummus during the day. Another great way I add in this nutrution is by using It Works! greens. (They only cost $1.17 per day. I'd love to tell you more about them.) Easy right? All those veggies and roughage also help to speed up your metabolism by increasing the hormone Leptin, thus resulting in weight loss.
