Turkey Chili From the Men at the Firehouse!

This is one of my favorite recipes from my second born son. He's a fireman. Did you guess?

Here it goes....

 

Turkey (or Chicken) Chili

1 pound ground turkey (or 2 whole chicken breasts)

1 packet organic chili seasoning or 2 tbsp chili powder and ½ tspn cayenne pepper

1 can organic corn

1 can organic black beans (or may substitute 2 cans of Kroger organic tri-beans)

1 can organic red chili beans

1 can organic pinto beans

28 oz canned crushed tomatoes

1 can tomato sauce

 

Brown ground turkey, drain and set aside. In medium pot, add all ingredients. Stir in cooked ground turkey. Let simmer. This can be cooked on stove top or crock pot, on low for 4-6 hours.

 

I love these recipes that you can literally throw all kinds of good stuff in! I like to saute some chopped red onion, garlic, and chopped mushrooms in coconut oil, then using the same pan, brown the ground turkey (or whatever meat you're using). Then, when I'm adding all ingredients into the crockpot, I add a little zucchini and/or yellow squash. MMMmmmmm! (Keep in mind when adding more ingredients, you may need to add in more liquid. I just add in another can of crushed tomatoes ot tomato sauce.)

Of course, top this bowl off with your favorite toppings like sour cream, green onions, crackers and cheese. I like to also add avocado.
