So, my ketogenic diet consists of 70% healthy fats, 20% protein, and 10% carbohydrates from vegetables. I've been on this diet for almost 2 months now, and I'm still learning new and fun ways to eat my veggies. This morning my dad came up with the brilliant idea of slicing up butternut squash to use as a bun for his sandwich. We pan fried it in coconut oil and seasoned it with Himalayan sea salt and organic black pepper. I loved just the squash itself so I put 2 slices on a plate and called them pancakes. Soooooooo yummy. No unhealthy carbs, no sugars. My new favorite breakfast.
