Spiced Zucchini Cake

This cake really turned out wonderful. I made this for my husband's birthday and he was so delighted with it!

Ingredients

1 box organic yellow cake mix

3/4 cup milk (any option will do)

1/2 cup organic grass fed butter (or 1 stick), melted

3 organic eggs

2 teaspoons ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ground cloves

2 cups shredded zucchini (about 2 medium or 1 large)

3/4 cup chopped walnuts (optional)

 

Directions

1. Heat oven to 350 degrees. Spray bottom of a 13 x 9-inch pan with organic cooking spray.

2. In large bowl, beat cake mix, milk, butter, eggs, cinnamon, nutmeg, and cloves with an electric mixer on medium for 2 minutes. Stir in zucchini and walnuts. Pour batter into pan.

3. Bake for 35 to 40 minutes or until toothpick inserted in center comes out clean. Remove from oven, place on cooling rack. Let cool about 1 hour before frosting.
