Keto-Friendly Berries and Cheesecake Dessert
This is one of my favorites that I use as a dessert in which you can make fancy, or a quick snack that I take for work. It’s made with a keto-friendly sweetener and as always, organic ingredients that include strawberries and blueberries, cream cheese and vanilla extract.
For the dessert, I use…
1 16oz package organic strawberries, rinsed
1 6oz package organic blueberries, rinsed
1 8oz package cream cheese, softened
1/2 cup Swerve sweetener (sugar)
1 teaspoon vanilla extract
Graham crackers crumbs, optional
Directions…
Combine cream cheese, Swerve sweetener and vanilla extract. You can use a hand mixer to whip it up fancy or combine well with a fork. That’s it! You’re all done! Decorate your fruit however you wish. You can slice the strawberries in half, add the cheesecake layer, add the other half of the strawberry, top with the blueberries. Or stuff the strawberries either by slicing almost all the way through from the point down or by taking a melon baller and scooping out some of the inside of the strawberry, then stuff with the cheesecake mixture. Have fun with it!
My super fast single-serve snack version goes like this…
I take one or two organic strawberries, depending on how big they are. Cut into slices. Put in bowl. I mix together 2 tablespoons of organic cream cheese, 1 packet of Monk fruit sweetener or stevia, and a dash of vanilla extract. I mix this with a fork, then place on top of strawberries. Last, I sprinkle on some blueberries. Delish!! Perfect snack for work or school!
