Tasty Lunch for Mom

Sometimes being a mom (or caregiver) means you are last on the list as far as taking care of your own needs. I finally sat down to lunch at 4:22 p.m. today, but I am not any less thankful. Just look at this food! I follow a modified Ketogenic diet and I have never felt better! Check this out... I had chicken salad wraps with veggie chips, lentil/veggie soup and topped it off with a green chocolate protein shake. Delish! Now, what you don't see is the chicken is half of a fresh grilled organic chicken breast, mixed with half teaspoon coconut oil, half an avacado, one scoop of vegan mayo, a squirt of mustard and chopped onions and celery. The lentil soup also boasts a full tablespoon of coconut oil, with lots of veggies including lentil and green beans, celery, spinach, onions and garlic. I was very satisfied and my eyes were still too big for my stomach. (I had to save one of the chicken wraps for tomorrow's lunch.) If you don't think you can do it, I urge you to just try it. This will give you that much needed energy to make it through the day and more! Well, now we're off to the gym. Treatments that make you feel good. Can't go wrong with that.
